DESCRIPTION:Robert H. Lustig\, MD\, MSL\, is Emeritus Professor of Pediatri
 cs in the Division of Endocrinology\, and Member of the Institute for Heal
 th Policy Studies at UCSF. Dr. Lustig is a neuroendocrinologist\, with exp
 ertise in metabolism\, obesity\, and nutrition. He is one of the leaders o
 f the current “anti-sugar” movement that is changing the food industry
 . He has dedicated his retirement from clinical medicine to help to fix th
 e food supply any way he can\, to reduce human suffering and to salvage th
 e environment. Dr. Lustig graduated from MIT in 1976\, and received his M.
 D. from Cornell University Medical College in 1980. He also received his M
 asters of Studies in Law (MSL) degree at University of California\, Hastin
 gs College of the Law in 2013. He is the author of the popular books Fat C
 hance (2012)\, The Hacking of the American Mind (2017)\, and Metabolical: 
 The Lure and the Lies of Processed Food\, Nutrition\, and Modern Medicine 
 (2021). He is the Chief Science Officer of the non-profit Eat REAL\, he is
  on the Advisory Boards of the UC Davis Innovation Institute for Food and 
 Health\, the Center for Humane Technology\, Simplex Health\, Levels Health
 \, and ReadOut Health\, and he is the Chief Medical Officer of BioLumen Te
 chnologies\, Foogal\, Perfact\, and Kalin Health. \n\nAt the end of this a
 ctivity learners will be able to:    \n\n1. Differentiate between food s
 cience\, nutrition\, and metabolic health.  \n\n2. Explain the three prece
 pts of metabolic health: feeding the gut\, protecting the liver\, and supp
 orting the brain. \n\n3. Analyze why ultra-processed food is currently not
  considered food but could potentially be re-engineered to promote metabol
 ic health. \n\n\nContinuing Education: \n\nIn support of improving patient

 cal Education is jointly accredited by the Accreditation Council for Conti
 nuing Medical Education (ACCME)\, the Accreditation Council for Pharmacy E

  provide continuing education for the healthcare team.\n\nUCSF designates
